Ah, the trick for people who want to make it hard to change the settings!
With both the Dock icon and status item hidden, the only way to access the preferences is to open the app from the Finder, then press ⌘, (i.e. Command and Comma together; the standard shortcut for displaying preferences).
I meant to say above that I am really enjoying the 2.0 version of Time Out. It's nicely updated, works well, and accomplishes its mission of getting me out of my chair. Thanks!
